Berry Pie

It’s finally Spring and that means berries are coming into season! Like any normal person I’m not going to eat them raw, hell no. What fun would that be? Probably a lot actually. I really do love berries. No, I am going to enjoy them in a pie. I mean why eat fresh fruit when you can have a pie!

  • Double Crust:
  • 2 1/2 cups of unbleached flour
  • 1 cup of cold butter cubed
  • 6 - 8 tbs of ice water
  • 1 Egg.
  • Filling:
  • I used about 1 1/2 pints of strawberries (quartered) and 1 pint of blackberries (halved)
  • 1 to 1/2 cups organic sugar
  • 2 tsp of flour
  • 2 tsp cinnamon
  • Pie Pan 9" or 10"

If you have a Kitchen Aid or a mixer, making the pie crust is gonna be stupid easy. If you have to do it by hand, that's fine, it's just gonna take a little longer.

Throw in the flour and butter and blend together on a low - med setting. Or knead by hand.

Add a little bit at a time the ice water. Once the dough is well, doughy, divide into two balls and wrap in plastic wrap and place in the fridge for 1/2 hour.

Meanwhile, take your berries combine with sugar, cinnamon and flour. Set aside.

Preheat the oven to 400 degrees

After a half hour has passed. Take the dough out of the fridge, on a floured space roll one of the balls of dough out into a circle and place onto pie pan. Keep the extra dough don't remove it from around the edge of the pie pan.

Pour in the berries.

Roll out the other sphere of dough and place on top of the pie pan. Gently press the dough together around the edge of the pie pan removing any excess. Take a fork and press the dough around the circumference of the pie and have a stabbing spree on top of the pie. Don't go too crazy, just stab it enough that air can escape, maybe make a pretty design while you're at it.

Beat the egg and brush the top of the pie with the egg wash.

Place pie in oven and bake for 30 Mins, or when the crust turns golden.

Remove from oven and let cool. It's really good with some homemade whipped cream.
